The other night, for dinner I marinated a large skirt steak. Lots of garlic and olive oil. We added sauteed mushrooms and onions and ate steamed artichokes as a side dish.
The dinner was delicious. It was also very simple and easy to prepare.
The next day for lunch, I sliced up the meat and made a big steak salad.
In other news, I bought a mandolin. I know I'm behind the times, but that thing is a lifesaver. It's amazing. I've been looking for more excuses to use it more often.
