I love seafood so much. I don't need much persuasion to enjoy fish tacos, ceviche, lobster, or crab legs. You name it, and I probably love it. Thanks to Hook Line & Sinker, we get our crab leg fix pretty regularly. But last night, I wanted to stay in and make something delicious and quick. Mussels! I was inspired by the dish I saw on Camille's blog, but decided to forgo the pasta and make garlic green beans and roasted potatoes.
I've only cooked Mussels once before, and really who am I kidding? Victor was chef, and I was sous. So I looked up this recipe. It was so simple, yet the results were outstanding. I had always thought that mussels were a challenge to cook. Cleaning beards? (what?) No thanks! It turns out, buying farm raised mussels only need a quick scrub.
The best part? The whole meal was under $26. I'm pretty sure I've never gotten out of Whole Foods for less.
