Lovely lunch

Is egg salad a southern thing?  I'm not sure.  I've pretty much only lived in the south.  I've only recently realized that sweetened iced tea is considered a "southern thing."  I know, i probably sound silly.

Anyway, egg salad is one of my favorite things.  On white bread or crackers, the perfect lunch or snack it makes.

I didn't have much in the fridge, but I did have just enough to make egg salad on english muffins.

It was delicious and easy.

    YUM! I've always had a soft spot for egg salad. This looks delicious! Also, I wanted to thank you for leaving such a kind and thoughtful comment on my Equals Record post.
