Comforts seem to be the theme of my week, but whatever. I'm going with it.
I'm sure I've mentioned in passing that I'm a girl from the South. Yeah, I know Dallas is technically South, but when I think of THE South, I'm always thinking of the SouthEast. The thought conjures images of beautiful Charleston, or the charming city that Savannah is. Or better yet, the place I spent my college years, Atlanta.
Sweet tea, biscuits and gravy, pimento cheese, and tomato pie. I love these things, despite the fact that they don't exactly boast health benefits. In moderation, I try.
So today I channeled Paula and made a delicious tomato pie. For what it lacks in looks, it makes up for in taste.
Despite the fact that tomatoes are a summer fruit, my local grocer hasn't provided any that rival the sweet, robust variety that I grew up eating from my mother's garden. I ended up using a can of tomatoes. So, shoot me.
The star of the show for me is the mayo. I love mayo. I love Dukes. Too bad you can't get it past the Mason-Dixon. (Hint Hint, I need provisions.)
I opened the last jar mailed to me by my lovely mother.
But here's the thing. I switched up the pie just a bit and used a secret ingredient.
Zucchini!
And fresh herbs from my potted garden.
I still get a kick out of the fact that I've actually grown something. And I haven't killed it. Yet.
Yumm.
